Today we want to recommend one of the most famous Japanese pastry chefs, Hironobu Tujiguchi’s sweets in Wakura Hot Spring, Ishikawa. He has won a worldwide sweets competition before. His shop, LE MUSEE DE H has been a popular visiting spot in this area for locals and also visitors.
Feeling like you are on the surface of ocean
LE MUSEE DE H is located on a coast of the area of Wakura Hot Spring. The simple design of black, straight lines, and square shapes of the building makes it look gorgeous and modern. Inside the building, the side walls are all made of huge glasses so that you can feel like you are on the surface of the water. You can enjoy the sense of space here with the shiny reflected light from the sun.
It will be a nice idea to sit on a side of a glass wall here. You can see the Noto peninsula across the sea. The perfect ocean view form the café, LE MUSEE DE H definitely attracts people to come visit this place.

Many of the ingredients of these cakes are produced in Ishikawa. For example, they only use milk produced in Noto peninsula. Also, they are particular about the fat content of the milk that is different by seasons, so they study the amount of fat content of Noto milk and decide what kinds of recipe they can make. He has a strong preference for his ingredients.
Masterpiece of Tsujiguchi, Selavi
One of the recommended sweets is his masterpiece, Selavi. It ‘s a pistachio sponge cake covered with white chocolate mousse. The raspberry on top of the cake is a good accent. The soft texture of the white chocolate mousse and the flavor of pistachio is the perfect match that goes well with the sourness of the raspberry.
