"Nobuzuchi(信寿し)", which is a popular sushi restaurant among local people, opened another restaurant called "Noto Kaisen Don Mitone(能登海鮮丼・みとね)" in the center of Wakura hot spring area in 2012. Kaisen Don served here keep traditions and taste of "Nobuzushi(信寿し)". They use fresh fish. You will be satisfied with it for sure.
Thick and big size of Neta
The first thing you will be surprised would be a size of Neta (toppings of Sushi on rice which vary from fish to other ingredients.)
Neta on rice of this Kaisen Don is twice bigger than Neta on sushi. You can not eat them with one bite. These big Neta makes portion of this meal itself big. You will be really full after finishing it up. That's why young people who have a big appetite really like to come here and eat it.
There are seasonal menus besides fixed menus. If it's winter, there are rice bowls which have clubs and Japanese amberjacks on it. They will let you feel the season while eating Kaisen Don.
The dish in a picture above is called "AKB Don (AKB Rice Bowl)" They took the first letters of each seafood, A means Amaebi (Deep-water shrimps), K means Kani(clubs) , B means Buri (Japanese amberjacks), then named it AKB Don. As you can tell, those are seasonal seafood in winter.
Every dish comes with a salad, pickled vegetables and miso soup.

A owner of this restaurant, who is a sushi chef, makes Kaisen Don here. He is a specialist of this field. You will be amazed how fast and well he makes Kaisen Don.
He uses the same Neta as "Nobuzhushi (信寿し)" when he makes Kaisen Don. Also soy souse here are made in Kanazawa. Rice are also produced in Noto. He buys them from a local farmer.
He also puts efforts for combinations of tastes between rice and soy souse.
He told us that "It goes without saying that serving a rice bowl with fresh Neta and high quality ingredients are important." The Owner who learned how to be a sushi chef at "Nobuzuchi" keeps the taste of famous sushi shop also here.

1.Put soy souse over Neta
2.Soak every single Neta into soy souse then get them back on rice.
3.Put a piece into soy souse every time you bring it into your mouth.
Taste could be different depending on how you use soy souse. You can also change your way of using soy souse while eating. You will taste different for sure.
You can also get to choose a type of rice, which is either vinegar rice or non-flavored rice.
We usually use vinegar rice when we make Kaisen Don and Sushi. But the owner said that you will be able to eat more if you eat with non-flavored rice and non-flavored rice goes with soy souse more.
It means that you should not put too much soy souse if you choose vinegar rice.

It is easy to stop off here since it is in the center of Wakura hot spring area. You will see prices of meals which are on a board in front of the restaurant. You don't need to be nervous how much it will cost you.
You will take a seat at a table. There are chairs for kids as well, good for family visitors.
You need to go and get tea and water by yourself near a counter.
90 % of the customers here are tourists. Staffs here are used to have them around. People who are not only Japanese but also from other countries come here. So there is a one staff who can speak English.
There are spoons prepared. So you don't need to worry even you can not use chopsticks.
You will get to try Kaisen Don for more reasonable price than Sushi.
