Uogen Nishi-Maizuru store

Founded in the early Showa era in Maizuru, a fiercely competitive fish market, Uogen opened in 2015 as a branch of Marufuji Foods, a fresh fish retailer beloved to this day for its discerning eye. The restaurant begins with the procurement of seafood by Takashi Yuzawa, the company's broker and representative. Focusing on seafood delivered directly from Maizuru Fishing Port, the store offers a wide selection of carefully selected items from all over the Sea of Japan, from Ka in the east to Amino in the west. Chef Tetsuya Oishi prepares the bounty of the season's seafood, from rock oysters in the summer, blackthroat seaperch in the spring and autumn, and crab in the winter. "The greatest joy of a chef is being able to use the best fish of the day," he says. His meticulous work and visually stunning fish dishes have captivated not only local customers but also fans from Japan and abroad. The Uogen Higashi-Maizuru branch opened in the fall of 2019. Furthermore, the Togen Minato branch opened in 2025, offering customers the opportunity to enjoy grilling at their own table.
