Inaba Udon is particular about the noodle-making process and serves hand-made noodles. They also use carefully selected ingredients such as natural kelp from Rausu, Hokkaido, dried small fish from Goto, Nagasaki, and Hara Jirozaemon soy sauce from Hita, Oita. The soup base is also made with natural ingredients, and is adjusted to suit the temperature and climate of the season, making it lighter in summer and thicker in winter.
