Hirase Sake Brewery

Founded in 1623. Hirase Sake Brewery is a long-established sake brewery that has been in business for over 390 years and 15 generations. We only brew sake with specific names (ginjo, junmai, and honjozo) that meet national standards, value quality, and continue to preserve traditional techniques. We use a lot of Gifu Prefecture's "Hidahomare" rice, which is suitable for sake brewing, and we use underground water from the Northern Alps to brew it in the cold during the mid-winter season. We are particular about the quality of rice and water, and continue to inherit the traditions of sake brewing using superior techniques, and continue to brew high-quality products that satisfy our customers.
