Hirase Sake Brewery

Hirase Island Sake Brewery is a long-established sake brewery that was founded in 1623 (Genwa 9) and has been in business for over 400 years, with 15 generations of brewers. They only brew designated sake (ginjo sake, junmai sake, honjozo sake) that meets Gifu Prefecture standards, valuing quality and preserving traditional techniques. They use a lot of Hida Homare rice, which is suitable for sake brewing and is grown in Gifu Prefecture, and underground water from the source of the Miya River River, to brew sake in the harsh winter. They are particular about using good rice and good water, and have stubbornly carried on traditions by devoting themselves to sake brewing with excellent techniques, continuing to brew high-quality masterpieces that satisfy their customers. Their signature brand is Kujudama.
