Nihon Izumi Sake Brewery

Brewing sake just steps from the station—Nihon Izumi Sake Brewery is located only a 1-minute walk from JR Gifu Station. The brewery has long upheld the traditional methods of Japanese sake-making, many of which were officially recognized as a UNESCO Intangible Cultural Heritage in December 2024. Located on the basement floor, the brewery uses a “Fresh Rotation” system to produce sake year-round, transcending the limitations of the four seasons.
