The course meals feature a variety of fermented ingredients made in-house by the chef, offering elegant, rich flavors that bring out the full umami of each ingredient. Inside the restaurant, you'll also find pesticide-free vegetables grown locally in Gifu, along with handmade sweets prepared by the chef’s wife, who is a pastry chef—both available for purchase.
