Ehime Prefecture, surrounded by mountains and the sea, has few plains and steep terrain, and is divided from east to west into Toyo(Eastern Ehime), Chuyo(Central Ehime), and Nanyo(Southern Ehime). Each of these three regions has its own unique climate and temperament, and the sake they make is slightly different. Toyo produces light, refreshing sake. Chuyo produces light, flavorful sake. Nanyo produces sake with a fuller flavor, and in general, Ehime sake is said to be flavorful and smooth, matching the light food culture centered on white fish from the Seto Inland Sea. The sake nurtured by the good-natured people of Ehime in the mild climate and environment of the Seto Inland Sea is known as a soothing "sake" with a gentle mouthfeel.
