Microgreens are young vegetables that have been sprouting for about 1 to 3 weeks. They are small vegetables less than 5 cm in size, but they are said to contain five times the nutrients of mature vegetables, such as vitamin C, vitamin K, vitamin E, lutein, and carotenoids.
The taste of these microgreens is less bitter and harsh than that of fully grown vegetables, and their aroma and flavor are delicate and rich. Miyamoto-san told us, "At OTM, we use 20 different kinds of microgreens. Each type has its own unique flavor."
To make the most of the appeal of these microgreens, they researched how to combine them with various ingredients. As a result of their careful study, they have created a variety of dishes that can only be enjoyed here at "OTM Restaurant."

Among the many dishes on the menu, the signature course menu "PREFIX OTM PLATE" is particularly eye-catching.
