Hayashi Honten is an established sake brewery located in Kakamigahara, Gifu Prefecture.

Gifu is a mountainous prefecture where pristine water is easily available. This is the secret ingredient behind the high-quality sake produced here. Gifu is also where Hayashi Honten was founded. The brewery has been making sake loved by locals for generations.

Hayashi Honten was the first sake brewery in Japan to develop the “triple fermentation process,” a next-generation sake-making method free of additives. This technique creates sake that is great for your health with a distinct flavor utilizing natural lactic acid sources.

The quality of their sake is highly reputed around the world. The brewery won the Platinum Award at the Kura Master 2020, a sake competition held in France.

Around 90 years ago, Hyakujuro Ichikawa donated 1,200 cherry trees to Shinsakai River in Kakamigahara. These blossoms became known as the Hyakujuro Sakura and is now a famous cherry blossom viewing spot visited by hundreds of people.

The hope behind this beverage is for people from all walks of life to enjoy sake under the Hyakujuro Sakura in full bloom. This wish became the foundation of the Hyakujuro brand’s creation in 2012.

To date, the Hyakujuro brand has sold over 30 different varieties, each having its own distinct flavor. For instance, the “Hyakujuro Sakura” is a popular beverage overseas with a fresh taste reminiscent of spring.

Special attention is also applied to the Hyakujuro label. The label is inspired by a kabuki style of makeup called kumadori. This eye-catching label is photogenic, while expressing the love that Hyakujuro Ichikawa held for his hometown.

Currently, the “Hyakujuro Emotion” series will be sold in a limited quantity of 110 bottles. This release is part of Hayashi Honten’s 100th anniversary project “For the Next 100 Years~Hyakujuro in the Future~.”

Emotion is a sake series that gives a tangible form to the brewery’s wish to empathize with the feelings of others more than ever before.

The Emotion series comes in five sake varieties to encourage the following emotions: Yume (Dream), Miyabi (Elegance), Bi (Beauty), Do (Zen), and Wa (Harmony).

You can enjoy different flavors with each sake. For example, Yume (Dream) has a charming sweetness while Miyabi (Elegance) has a refreshing grapefruit-like scent. Check out the official website (Japanese) for more details.

Don’t overlook the product’s luxurious packaging or the sake cup that comes as a set. The sake cup is custom-made by Marumo Takagi, a celebrated Mino ware producer.
