What is AyuRamen?
This "sweetfish broth" ramen arrived on the ramen scene in the spring of 2003. It is a masterpiece made with the utmost care for sweetfish, and is topped with Ichiyaboshi instead of roasted pork.
Gifu Prefecture started this project with the desire to have people taste sweetfish from HidaTakayama, and it took a long time, 10 years of planning and 3 years of trial and error, to finally open a ramen shop. Rather than simply serving sweetfish as a Japanese dish, I think it took extraordinary effort and wisdom to create ramen, which has now become a national dish of Japan.
