Sushi Toru, an Edomae sushi restaurant located in a residential area of ​​Takaodai, has relocated and renovated to a location facing the main street, under a new name. While the owner, Tsukatani, maintains the same approach as the previous restaurant, where he entertains customers with conversation over the counter while carefully preparing each of his carefully selected ingredients, the restaurant has increased the number of table seats where customers can enjoy their meal at their leisure, making it an even more user-friendly sushi restaurant. Ingredients are sourced from all over the country, mainly from Kanazawa Port, Chuo Market, and Himi Fishing Port, with the origins changing depending on the season, and the nori seaweed and wasabi are also carefully selected from their respective origins. Even the famous supporting ingredient, ginger, is carefully prepared in-house, and the restaurant's sincere attitude of sparing no effort in every detail has earned it many long-time fans.

Lunchtime is centered around casual sets centered around nigiri sushi, while in the evening you can enjoy the old-fashioned style of ordering as much of your favorite topping as you like, or choose a course that allows you to enjoy both a variety of Japanese cuisine and sushi. The evening course in particular is highly unexpected, including homemade mullet roe, freshly caught local fish, Noto fugu, as well as foie gras and negima skewers.
