Using carefully selected ingredients from the Hokuriku region, this Japanese izakaya restaurant offers a first-of-its-kind collaboration of "Sushi × Primitive Grill(genshiyaki) × Molecular Nutrition" that can be enjoyed with all five senses. In order to achieve both deliciousness and health, the restaurant offers carefully selected dishes that are as "gluten-free," "casein-free," and "low-carb" as possible, naturally making you healthy just by eating them.

At the large U-shaped counter seats surrounding the impressive robata grill, you can enjoy each and every delicate dish as it is prepared right before your eyes. While watching the lively open kitchen and listening to explanations about the dishes, you can enjoy a variety of carefully selected dishes to your heart's content. The satisfying "Special Course" presented with the restaurant's pride and joy, consists of 20 dishes from 13 categories, including sushi, genshiyaki (primitive grill), special a la carte dishes, and freshly kneaded warabimochi prepared right before your eyes, and so on. The restaurant expresses food and fun with seasonal dishes, and serves dishes that are carefully selected and made with great care for each ingredient, so you will never get bored no matter how many times you visit. There is also a wide selection of natural wines and sake from all over Japan, including Ishikawa's local sake, which can be enjoyed with your carefully selected meals.
