Pork bone ramen + vegetables "Vegetable Pot Ramen" is here!
The " creamy tonkotsu soup " was created after 10 years of training and learning at tonkotsu ramen shops in Fukuoka and Saga, where the ramen is always crowded with customers. The " veggie pot ramen " is created by adding seasonal vegetables to the proud tonkotsu soup. The soup is made by blending different ratios of vegetables to tonkotsu, resulting in a rich, smooth soup that brings out the umami of the vegetables. You can enjoy the seasonal flavors of tomatoes in spring, asparagus in summer, pumpkin in autumn, and burdock and shiitake mushrooms in winter. To finish off the meal, try adding risotto rice (sold separately) to the soup! Highly recommended!

MAKI THE RAMEN's Commitment
Rich and creamy, foamy pork bone soup!
Maki-san has mastered the thick and creamy foaming tonkotsu soup over 10 years of training. He develops tonkotsu ramen, seafood tonkotsu ramen, and veggie pot ramen using this soup as a base. The foam is not made by creating bubbles, but by creating fine bubbles called "fat bubbles" that are created when air, water, and oil combine while cooking the soup over high heat. These bubbles are the source of the umami, sweetness, creaminess, and thickness of the tonkotsu ramen.
First, scoop up the soup with a lotus flower and put it in your mouth. The rich, mellow flavor of the pork bones will spread throughout your mouth as if dancing.
Of course, we also pay attention to the noodles.
Following the trend of Hakata Tonkotsu ramen, they use thin noodles. The noodles are made with whole wheat flour, making them very chewy, and the soup clings to them as it reaches your mouth. The balance between the wheat flavor and the soup is just amazing!
First, enjoy the pork bone ramen...
On your first visit, I would honestly recommend trying the tonkotsu ramen . I think it represents the best of Hakata and Saga tonkotsu ramen. If you want something a little more Kanto-style (?), you might be more familiar with seafood tonkotsu .
If you move on to the advanced course, you will of course be able to try our seasonal veggie potage ramen !
Ordering Method and Manners
Here we will introduce how to order and proper etiquette.
How to line up and points to note
When there is a line in front of a store, you will have to wait in line. There are a few things to keep in mind when doing so.
1. Line up at the back.
2. Line up once everyone is present.
3. Don't interrupt.
4. Do not block the entrances of other shops or homes.
5. Don't spread out too much on the road. Line up in a straight line.
Please follow the rules so that everyone can have a good time.
How to order
There are two main ways to order at ramen restaurants in Japan: buying a ticket from a machine called a ticket vending machine, or looking at the menu and ordering verbally.
At MAKI THE RAMEN, you will first be shown to your seat and then you can order from the menu . A waiter will come to take your order, so you can order your favorite items. They also offer extra noodles , half extra noodles, and extra flat noodles , and you can even have more soup! They also have a wide selection of rice dishes and side dishes , so you can be sure to fill up your stomach.

Special order
Our veggie pot ramen, made with rare vegetables and pork bones, changes with the seasons and is available in five varieties: spring tomato, summer asparagus, fall pumpkin, winter shiitake mushroom, and burdock. Taking advantage of the characteristics of each vegetable, we changed the ratio of vegetables to pork bones, the concentration of pork bones, and the cooking method, and the flavor was created after much trial and error. To allow more customers to enjoy this veggie pot ramen, we have packed it in a bag with the same flavor as in the restaurant. Enjoy the taste of MAKI THE RAMEN at home.
"I want to spread the culture of women being able to eat ramen alone." With that thought in mind, she started eating out 20 years ago. She is a ramen-loving woman who has traveled to all 47 prefectures and eats more than 600 bowls a year. While there are many male ramen freaks, she is also known for her ramen life, which includes working as a TV personality and maintaining her figure. She organized "Ramen Girls' Gathering," renting out popular ramen shops, and in 2015 held the "1st Ramen Girls Expo" at the Yokohama Red Brick Warehouse. The event, which brings together popular shops from all over the country, was later held in Osaka, Nagoya, Tokyo, Kumamoto, and Shizuoka, attracting a total of approximately 750,000 people. In 2018, she founded Ramen Switch Co., Ltd. and released the world's first ramen jewelry brand, "ZURU+.". She produced and published "NOODLE SAKE -Spring, Autumn, Winter-" and "Rice and Agave Ramen-only Craft Sake," and "Tokyo Ramen Collection" (Shobunsha).
