What is "Zweiter Läden"?

KÜCHE (German for kitchen), a meat-based tsukemen restaurant that first opened in the western capital of Osaka, is opening its second store in the glamorous capital of Tokyo, Zweiter Läden, which means second point in German, in April 2023.

The opportunity to open the store came about after the limited-time business hours held in 2022 became a hot topic.

The interior of the store is very stylish and the monochrome design with the store name written in tiles is also very cool!

A variety of ramen made with creativity by the owner, who has an Italian background

The owner, who is originally from the Kansai region, has come up with a witty idea to "satisfy your hunger" by offering an original menu for 1,500 yen only from 6pm to 10pm. Another great thing about this restaurant is that they also serve delicious food to go with wine!

Another fun thing is that you can enjoy a variety of creative noodles that combine the charm of Italian cuisine with the deliciousness of ramen depending on the season!

Access to Zweiter Läden

8 minutes walk from Takadanobaba Station , 6 minutes walk from Nishi-Waseda Station

If you can't decide, try this! The signature dish "Tsukemen KURO"

In 2022, the restaurant opened for a limited time in Tokyo, and Tokyoites were blown away by its unique flavor. Word quickly spread, leading to the opening of a second store. This is the rumored tsukemen! "Tsukemen KURO". The rich soup made from shredded meat has an international flavor and exudes a mysterious feeling. Although it is based on seafood and pork bones, it is not like that at all. The secret is said to be the use of rare parts of pork, cheese techniques that make use of the restaurant's experience in Italian cuisine, and the balanced use of aged soy sauce.

Of course, the noodles are also carefully selected, and they are neither like ramen noodles nor pasta noodles. This is also a mystery, but these noodles are delicious! Moreover, when combined with the special soup, the taste is... jaw dropping.

Rather than getting lost, it's something you should definitely try on your first visit.

We also recommend "RAMEN KURO" which is a ramen substitute!

It looks like tantanmen noodles, the chili oil makes it look spicy, and it also looks like it has a thick foamy texture... This mysterious ramen, which betrays expectations, is like a light version of the tsukemen soup diluted with diluted soup, and is easy to drink, rich, and addictive, making it a multi-national ramen that you'll likely drink down to the last drop.

The noodles are thick and pasta-like, with a firm texture that is a real pleasure, and the toppings of rare roast pork, spring onions, and wakame shellfish all do a great job. The deliciousness spreads in your mouth so quickly that you'll find yourself eating it all in an instant if you're thinking about something else.

There is also the option of curry ramen (see image below), so there's plenty to look forward to in return.

Ordering Method and Manners

Here we will introduce how to order and proper etiquette.

How to line up and points to note

When there is a line in front of a store, you will have to wait in line. There are a few things to keep in mind when doing so.

1. Line up at the back.

2. Line up once everyone is present.

3. Don't interrupt.

4. Do not block the entrances of other shops or homes.

5. Don't spread out too much on the road. Line up in a straight line.

Please follow the rules so that everyone can have a good time.

How to order

There are two main ways to order at ramen restaurants in Japan: buying a ticket from a ticket vending machine, or looking at the menu and ordering verbally.

If you order from the ticket machine, hand the ticket to the staff before sitting down and they will guide you to your seat. If you order verbally, you will be guided to your seat and you can order after you sit down.

For "Zweiter Laden", you will need to purchase your ticket from a ticket machine.

There are two payment methods: cash and QR code payment (PayPay, LINE Pay, Alipay) .

1) Insert money (if using cash) ⚠️ If using QR code payment, tell a staff member

2) Select your favorite menu and press the button. You can choose not only the ramen but also toppings and side dishes.

3) Take the ticket that comes out. Note that change may come out automatically or you may have to press a button to get it.

4) Give the ticket to the staff

Once you hand your ticket to the staff, you will be guided to your seat.

A word from the owner, Masashi Yokoyama

I have an unusual career as a ramen shop owner. I started out cooking banquets at a hotel, then worked as a chef at an Italian restaurant for five years, before taking over my father's ramen shop and going down the path of ramen. At that time, I was pursuing the traditional ramen path. Nine years later, the tsukemen boom arrived, and I made a big move to create a tsukemen that only I could serve, and I went through a lot of trial and error. Before I knew it, five years had passed, and I thought I had finally created a tsukemen that I could serve to customers, but I still only got orders for ramen. Still, I continued to research and completed the "best" tsukemen KURO. I wanted as many people as possible to taste that taste, so I opened "KÜCHE" in Osaka. Then, I opened a second store in Tokyo, named it "Zweiter Läden" which means second store in German, and now people in Osaka and Tokyo can enjoy our proud taste.

Please do try this ramen that I have named "mysterious and mysterious."
