Ono, Kanazawa City, is one of the top five soy sauce producing areas in Japan. Yamato Soy Sauce & Miso is developing and selling a series of products and seasonings using traditional Japanese foods such as soy sauce, miso, amazake, and koji. They are particularly focused on promoting the culture of fermented foods using yeast, lactic acid bacteria, and koji fungus, and propose a lifestyle in which people pursue beauty and health by incorporating koji into their daily meals under the concept of "one soup, one dish, one koji." On the premises of their head office and manufacturing factory, Koji Park, they have gained popularity as a tourist spot in the Ono area, with places such as Fermented Food Beauty Restaurant, which serves seasonal koji dishes and aged brown rice, Hishihogura, which sells fermented foods, Kome Tona, a Kanazawa cheesecake specialty store that uses koji, and Kojigura, where you can experience a rare koji hand bath.

Kanazawa Tenpei Santo Doroshu Kenkyujo opened in June 2024 within Koji Park. It is a gastropub where you can casually enjoy drinks made with carefully selected doburoku and amazake from around Japan, as well as homemade snacks seasoned with fermented seasonings. They use brown rice and mash soy sauce, and are as creative as possible in taking advantage of the power of bacteria and fermentation to bring out the flavor of the ingredients. Another attraction is the excellent location, where you can see the beautiful Hakusan and Tateyama from the terrace seats on sunny days.
