What is HAKATADAMA?
HAKATADAMA was founded in Oohashi , a sub-center of Fukuoka-City , in 2014, and it has been 10 years since then. The basic TonkotsuRamen is praised by locals as the best TonkotsuRamen, somewhere between strong and light.
Oohashi is a ramen battleground in Hakata. This popular ramen shop is located in this area and has a theme of remaining the same for a long time. The owner's commitment to keep changing in order to achieve this is well known among locals.
The price of the ramen has remained the same since the old days, and it is now a very affordable restaurant that makes you want to go there every day.
The restaurant has a casual, food stall-like atmosphere, and one of HAKATADAMA's defining features is that it is not intimidating.
The interior of the shop is reminiscent of a food stall, and conversation with the friendly Mr. Dama is lively.
Access to HAKATADAMA
HAKATADAMA is located in Oohashi , Minami-ku, a little away from downtown Fukuoka , but it is 4 stops (about 6 minutes) by Nishitetsu train from Nishitetsu Fukuoka(Tenjin) Station , and about 2-3 minutes on foot from the west exit of Nishitetsu Oohashi Station, so it takes about 10 minutes in total from Tenjin. From Hakata Station , it is convenient to take a bus bound for Nakagawa Eigyosho to Oohashi Station. It takes about 20 minutes to get there.
HAKATADAMA is located on a street corner. This is the exterior that appears when you see it! The large noren curtain and the stockpot placed outside are very striking and easy to spot. When you see this, it's the moment you realize you've arrived in Hakata.
Once you Kodama through the noren, you're in Kodama World!
Although it's a little far away, it's conveniently located about 10 minutes by train from Tenjin, so it's one of my favorite restaurants that I always visit whenever I go to Fukuoka.
You'll also want to stop by the tourist attractions of the city of Hakata.
It is said that there are few tourist attractions in Hakata, but in fact there are many attractive places. For example, "❶ CANAL CITY THEATER" is a popular spot where you can enjoy not only shopping but also fountain shows. In the vicinity, there is "❷Kushida Shrine, the main shrine of Hakata, and the old-fashioned arcade " Kawabata-Syoutengai" has a charming atmosphere. Furthermore, on the other side of the river, "Nakasu", the most bustling shopping district in Kyushu, spreads out, and "❸ FukuHakuDeaibashi Nakasu and Tenjin, is a tourist base. Crossing the bridge, you will find "❹ Kyu Fukuoka-ken koukaidou KIHINKAN", and if you walk a little further, you cannot miss "❺ AkarengaKinenkan". This area is dotted with buildings from the good old days, so you can enjoy walking around the town.

If you want to enjoy sightseeing in Hakata even more, we recommend going a little SeasideMOMOCHI Momochi." Here you can see "MIZUHO-PayPay-DOME," "Fukuoka Tower," and the relaxing "Momochi Beach," making it an experience that feels like a short trip.
At night, the Tenjin and Hakata areas are lined with food stalls (some of which are shown in ⑥), and are bustling with locals and tourists alike.
There are also plenty of highlights, such as the Setsubun Festival at Kushida Shrine, the cherry blossoms at MaizuruKouen(Fukuoka Castle HakataDontakuMinatoMatsuri), the HakataGionYamakasa festival. If you visit during these times, you'll enjoy an even more special trip. And when it comes to Hakata, ramen is a must-try! Another great thing about it is that it can be enjoyed easily as a light snack.
Hakata ramen is a daily food
The friendly owner , Kodama Hiroshi(nicknamed Dama-san), opened the restaurant in 2014 with the idea that " Hakata ramen should be a casual, everyday meal ."
The ramen, which has the same taste as back then, has a simple composition that preserves the traditional Hakata ramen .
Thin noodles swim in a milky white tonkotsu soup, topped only with roast pork and green onions, in the original simple Hakata style. No extra embellishments needed. That's what Damaryu is all about.
The noodles have a hearty wheat flavor, the soup is packed with the dynamic deliciousness of pork , and the garnish of green onions and pork pork really bring out the flavor, making this a ramen that is good enough on its own.
This bowl-shaped face is what "The Hakata Ramen" is all about.
Dedication to the soup
The pork bone soup has a sweet taste, but is neither too thick nor too light, making it just the right balance that you could eat every day. This is the taste that Dama is looking for.
No pig heads are used, and instead the pork bones and back bones are simmered to extract a clean, odorless flavor. The delicious pork bone soup at HAKATADAMA is so tasty you'll find yourself drinking it all up, and it's this flavor that draws many locals to the restaurant.
Attention to detail in noodles
In recent years, homemade noodles have been on the rise, but there may not be many in Hakata. The city is full of ramen shops, so noodle craftsmen have been competing with each other for a long time to make delicious noodles for food stalls and ramen shops, which is probably because Hakata is the city of ramen.
In this environment, the noodles are carefully made by Dama in the workshop at the back . That's why they offer 100 yen extra noodles. It's a paradise for extra noodles! You can see students and children enthusiastically calling for extra noodles. You can choose from six levels of noodle hardness: very soft, soft, normal, hard, very hard , and hard . I order the "hard" version because that's my preference. The noodle-making process is particular about changing the mix depending on the weather and aging the noodles for two days , which gives the noodles a firm texture even though they are very thin and straight, and I think it's wonderful how Dama's manliness led him to start making his own noodles with the idea of making ramen as cheap as possible.
Mr. Kodama carefully makes the noodles in the workshop at the back. It's great to see the efforts he makes to serve ramen at a reasonable price.
Attention to Toppings
The simple dishes are packed with attention to detail. "We use pork from Kyushu, green onions from Itoshima, and eggs from Hirano Poultry Farm in Asakura County," says Dama, who is particular about the origins of his ingredients. This is another example of Dama, who obtained a chef's license so that he could make ramen.
↑ Kyushu-produced pork is carefully rolled one by one and simmered in a soy sauce-based sauce. The balance with the pork bone soup is also perfect!
There are also ramen varieties called KARADAMA and KURODAMA.
In addition to the default ramen, HAKATADAMA also offers two other types of ramen: "KARADAMA" and "KURODAMA." The "KARADAMA" is based on the default ramen and is made slightly spicy with chili oil and chili peppers. This goes well with the tonkotsu soup, so much so that you'll find yourself reaching for a second bowl. When the soup is reduced and it becomes more like a mixed soba, you'll discover a different flavor. This is a must-try for those who like spicy food. On the other hand, the "KURODAMA." As many of you may know, this is a ramen that uses garlic oil (burnt garlic) in the style of Kumamoto ramen. It's a powerful ramen recommended for those who want something punchy. Both ramens are doubled in flavor with the handmade taste that is unique to the inquisitive Dama-san.
This pop feel also gives off a beloved character vibe.

"We've been serving authentic Hakata ramen that can only be found here, and before we knew it, 10 years have passed."
Using carefully selected ingredients from Kyushu, the soup is carefully cooked and boasts a deep pork bone flavor and gentle taste. The homemade noodles are aged for two days, creating a simple yet chewy bowl that blends perfectly with the soup.

"I want to spread the culture of women being able to eat ramen alone." With that thought in mind, she started eating out 20 years ago. She is a ramen-loving woman who has traveled to all 47 prefectures and eats more than 600 bowls a year. While there are many male ramen freaks, she is also known for her ramen life, which includes working as a TV personality and maintaining her figure. She organized "Ramen Girls' Gathering," renting out popular ramen shops, and in 2015 held the "1st Ramen Girls Expo" at the Yokohama Red Brick Warehouse. The event, which brings together popular shops from all over the country, was later held in Osaka, Nagoya, Tokyo, Kumamoto, and Shizuoka, attracting a total of approximately 750,000 people. In 2018, she founded Ramen Switch Co., Ltd. and released the world's first ramen jewelry brand, "ZURU+.". She produced and published "NOODLE SAKE -Spring, Autumn, Winter-" and "Rice and Agave Ramen-only Craft Sake," and "Tokyo Ramen Collection" (Shobunsha).
