What is Mitchan Souhonten?

Micchan Souhonten is a long-established okonomiyaki restaurant founded in 1950. It was the first owner, Inune Mitsuo, who established okonomiyaki as soul food as Hiroshima recovered after the war. At the age of 19, he took over the okonomiyaki stand "Mikasaya" started by his father, and changed the name of the restaurant to "Micchan" in 1953. He named the restaurant after his own nickname so that his acquaintances would easily find the restaurant.

In 1955, the shop moved to Nishishintenchi Public Square (currently the area around Hiroshima Parco). Around this time, the prototype of modern okonomiyaki, "soba-filled okonomiyaki," was perfected, and the shape changed from folded in half to a round shape. Then, in 1965, the first shop, "Micchan," opened in the Hiroshima Station Building. At the time, it was so popular with customers that they went all the way to Osaka to buy a cabbage-cutting machine.

The first Mitchan Souhonten store opened in 1968. It quickly became popular and moved to its current location in 1987, followed by the Fukuya Hatchobori store. From there, more stores opened one after another, and Mitchan Souhonten okonomiyaki is still loved today at various stores in Hiroshima.

Micchan Souhonten's Commitment

The okonomiyaki at Mitchan Souhonten is packed with many of Inue Mitsuo's unique features that have remained unchanged since the old days.

First, the grilling process. To prevent the taste from changing depending on the chef, multiple people are assigned to grill the meat to ensure a consistent taste.

They also pay special attention to the way they cut the cabbage. They change the cutting method depending on the season, the condition of the cabbage on the day, and the part of the cabbage to ensure the texture is consistent.

They also pay special attention to the dough, making it simple with just flour and water so that you won't get tired of eating it every day. The noodles, which are characterized by their crispy texture, are made using fresh noodles, which are fried to create that texture.

And the most important part of okonomiyaki is the sauce. Mitchan Souhonten's original okonomiyaki sauce is a luxurious sauce made with carefully selected ingredients. Please take a look at this proud sauce that makes the okonomiyaki delicious.
