This shop is popular for its gelato made with raw milk from Brown Swiss cows, which has a rich and gentle sweetness. This is a gelato specialty store directly managed by Maekawa Farm, located close to Banshu Kiyomizu Temple, a famous temple in Kato City. We asked Shigehiro Maekawa, the owner of this...

"Brillante" opened in 1999 as a directly managed store of Maekawa Farm. Mr. Shigeyasu, the father of the current owner, Mr. Shigehiro Maekawa, opened the business in hopes of making delicious processed products using the company's raw milk.

The store's name, "Brillante," is an Italian word that means "shining" or "wonderful." We continue to create products that live up to our name. The store is located along Prefectural Route 311, about 500 meters from the entrance to the approach to Banshu Kiyomizu Temple, one of Kato City's famous temples and one of the 33 sacred sites in Saigoku. It seems that many customers stop by after visiting the shrine.

The atmosphere is a little different from the stylish exterior, and the inside of the store is built like a log house, with a smell of wood. The furniture is stylish and creates an atmosphere that makes you want to stay for a long time.

The interior of the store, designed by a wife who used to run a flower shop, is very stylish with its use of accessories. While waiting in line, you can't help but notice the decorations on display. There are days when the number of girls is 100%, and other days when there are many guys coming home from golf on weekdays or when it's an old people's party. Some regulars go around trying out the shop's gelato, and those who do well treat the other members.

There is no doubt that this is a shop that is loved by people of all ages, including people who come from Australia and say, ``I've never had such delicious gelato before,'' and people who stop by every time they visit and say, ``I can't leave without stopping by.''

Introducing the flavor lineup

It seems that they have a repertoire of over 100 flavors including seasonal menus, but only about 10 flavors are always available. The most popular one is of course "milk". This is a proud product of the farm's directly managed store. The next most popular item is pistachio.

The ones available throughout the year are milk, pistachio, Uji matcha, rum raisin, and chocolate chips, and the others change depending on the season.

I received a double of the popular two-top "milk" and "pistachio". It has a distinct milky taste and a refreshing sweetness. Pistachio is also delicious. The balance between the pistachio flavor and milk is exquisite, and this combination is golden.

This is a strawberry and milk double that is the most popular seasonal product. Milk is delicious and you won't get tired of it. Although it has a strong milky feel, I would say it's not overpowering.

Let's introduce some other popular flavors. "Rum Raisin". An irresistible flavor with a milk base and rum scent.

"Belgian chocolate" Because it dissolves quickly, it was originally only available in the winter, but due to fan requests, it is now available in the summer as well. It's quite rich.

The "Adult Polar Bear" is a big hit and is in high demand for becoming a standard product. It contains plenty of dried fruits such as raisins, apricots, pineapple, orange peel, dried apples, and cherries, and has a strong condensed milk taste. It's a luxurious flavor that you can see why it's called "Adult".

In addition, we have a wide variety of seasonal products made with seasonal vegetables and fruits. For example, ``Momo'' made with peaches from Kato City, ``Budo'' made by nearby farmers, and ``Melon'' made with melons from Inami Town are all summer staples. ``Plum'' made using honey umeboshi has a sour and cheesy taste. It's a phantom flavor that if the owner, Mr. Maekawa, is not satisfied with, he will throw it away.

In addition, tomato sorbet and watermelon sorbet will also be available.

What's the secret to its deliciousness?

``Why is it so delicious?'' The secret lies in the raw milk from Brown Swiss cows. "The aroma of Brown Swiss raw milk is similar to condensed milk. We use a large amount of Brown Swiss raw milk, and change the ratio with Holstein milk depending on the flavor."

In order to produce delicious raw milk, we pay close attention to the cow's diet and living conditions. Graze the animals to make them stress-free, and reduce the amount of mixed feed. For example, feeding cows a mixture of slow-digesting fermented rice and fast-digesting foods such as oat stalks and alphafa will encourage cows to repeatedly chew their cud and increase their happiness level.

Of course, we try to avoid using chemical additives and preservatives as much as possible so that the flavor of milk can be conveyed directly. Repeating this process produces gelato that is loved by men and women of all ages.

I look forward to the future prospects.

Mr. Shigehiro is taking advantage of his store's holidays to participate in various seminars and is exploring various future developments. First, narrow down the breed of cow to Brown Swiss. They also procure 80% of their raw materials themselves by creating orchards in vacant areas of farms. Make your own cheese and create the ultimate cheesecake. Commercialize pizza, panini, hot sandwiches, etc. using our own cheese and tomatoes and zucchini grown in our own garden. We can't take our eyes off Brillante, which continues to shine by creating more and more delicious products with reliable ingredients and a noble spirit of learning.
