1. “AWAJI BEER” is a gold medalist in the world competition!
``AWAJI BEER'' won the gold medal for its lager type ``Pilsner'' and the bronze medal for its ale type ``Alto'' at the ``International Beer Cup 2018'', one of the world's five major beer competitions.
Craft beer can be broadly divided into two types: ``Lager type'' and ``bottom fermentation'' which use lager yeast, and ``Ale type'' and ``top fermentation'' which use ale yeast. Every craft beer has a unique flavor that takes advantage of the flavor of yeast.
There are many restaurants and hotels on the island that serve AWAJI BEER, which is recognized worldwide. If you visit Awaji Island, be sure to try the island beer.
"AWAJI BEER" was born in 1998, when the Akashi Kaikyo Bridge was completed. The brewery is located along the coast, about 5 minutes by car from Awaji IC on the Kobe-Awaji-Naruto Expressway. This time, we were able to have a tour of the brewery and hear from Hiroshi Inoue, the head of the manufacturing division.
[Mr. Inoue] ``The sounds you hear inside the brewery are the sounds of the sea on Awaji Island. Since it was actually recorded in the ocean and is not the sound of waves, it is often said to be BGM reminiscent of the inside of a mother's womb. This sound is played to the beer yeast as it ferments and matures.''
``The four basic ingredients of beer are malt, hops, yeast, and water. The tank on the far left is for preparation, and contains crushed malt and hot water. Then, the starch in the malt turns into sugar, producing sweet wort.'
``Next, the wort is filtered and boiled in an adjacent tank, and hops are added to add bitterness and aroma. For our ``Shima Lemon,'' we also add natural lemon peel from Awaji Island during this process.''
``After cooling the hopped wort, it is transferred to a fermentation tank, where yeast is added and fermented. When yeast takes in sugar, alcohol and carbon dioxide (carbon dioxide gas) are produced. The fermentation temperature and period vary depending on the beer, so we control the fermentation conditions every day.''
``Finally, it is transferred to an aging tank and aged for several weeks, and then it is completed. Unlike regular beer, it is not filtered to remove yeast or heat-treated to stop yeast fermentation. We take a lot of time and effort to bring out the full flavor of the yeast, so we want people to enjoy the original taste of beer, with the aroma of the yeast intact.''
``The yeast is still alive in the beer, so all the beer we brew at our house needs to be refrigerated. If the temperature rises, yeast may become active and the quality may change. We recommend storing it gently in the refrigerator in an upright position. Once you've finished drinking it, look at the bottom of the bottle; there should be some whitish yeast left.'
There is a direct sales corner at the entrance of the brewery where you can purchase bottled craft beer. “AWAJI BEER” is available in 6 types: Pilsner (yellow), Red Ale (red), Weizen (blue), Alto (green), Pale Ale (orange), and Shima Lemon (lemon) for 550 yen each (tax included) can.
2. Birth of “waSTEP Awaji Island”

It's a complex that houses 5 stores packed with the best parts of Awaji Island and delicious food, and is located about 3 minutes by car from the brewery.
