At the edge of the Fuse Honmachi shopping street, where people come and go, there are desks and kerosene stoves lined up. My eye caught an old lady warming herself in front of the stove.

It's been 75 years since Fuse was a mobile vendor. This is Koguma, a long-established shichimi restaurant.

When it comes time to mix Shichimi, he stands up quickly and mixes the seven types of flavorings with quick hands. Grandma will adjust the spiciness and flavor to suit your tastes, so you can create ``MY Shichimi'' that suits you.

Even customers who don't like sansho should try Shichimi. So I thought I'd try making it with yuzu, which has a nice scent, and came up with my original yuzu shichimi.

Although it is a simple method, many regulars come here for this shichimi, which is made with exquisite seasoning cultivated over many years of experience.

The aroma of shichimi, which is carefully mixed using traditional methods, cannot be felt from mechanized, mass-produced products.

Put it in a ziplock bag, squeeze out the air, and it's done. The scent of shichimi will not escape. If you can't eat it all right away, you can divide it into portions and store it in the freezer.
