What is Hakata Ramen Ryu?
Ramen HIDEYOSHI opened on April 25, 2023. The name of the restaurant comes from the fact that the noodle shop was established near Kaminoyama Castle, and the restaurant was named after Toyotomi Hideyoshi, with the hope that Yamagata miso ramen would be recognized by people all over the country.
The owner has 20 years of experience in the food and beverage industry before branching out into the noodle business. In pursuit of the unforgettable taste of the "Akayu Spicy Miso Ramen" that he fell in love with as a student, he perfected "Yamagata Spicy Miso Ramen" through trial and error. The owner is working day and night to increase awareness of this ramen, including "seeking friends who will help spread the word about spicy miso."
The menu at Ramen HIDEYOSHI is centered around Yamagata spicy miso ramen, but also includes Chinese noodles and tsukemen. However, it is the spicy miso ramen that is the most important to the owner, KANOYU. We would like you to try this dish first.
Access to Hakata Ramen Ryu
It is located a 17-minute walk (about 4 minutes by car) from Kaminoyama Onsen Station .

We'd like to introduce you to some tourist attractions in the Kaminoyama Onsen area that you should visit if you go to Ramen HIDEYOSHI.
If you visit Ramen HIDEYOSHI, you should definitely stop by Kaminoyama Castle (also known as Tsukioka Castle). This castle was once known as the "Famous Castle of Ushu" and is now a bustling local history museum. The magnificent castle ruins stand tall in Tsukioka Tenjinmori, and from the castle tower you can get a panoramic view of the Zao mountain range and Kaminoyama city. This area has a history of thriving as a castle town where the Kaminoyama Domain was located during the Edo period. It is about a 7-minute walk from Kaminoyama Onsen Station.
Kaminoyama Onsen is a historic site that is said to have been discovered by the traveling monk Gesshu after he saw the image of a crane. The hot spring is named "Tsuruhagi no Yu" (crane leg hot spring), and there is a foot bath near Kaminoyama Castle where you can enjoy the water. Why not soothe your travel fatigue while gazing at the Zao mountain range stretching out in the distance?
Located about a 15-minute walk from Kaminoyama Onsen Station, Yunoue Kannon is an ancient temple with a long history, known as Mizugishiyama Jigen-in Kannonji. This historic temple, belonging to the Chizan school of Shingon Buddhism, is known locally as Yunoue Kannon, and is characterized by a waterfall that pours hot water into the bathtubs in the communal baths on the temple grounds.
It is also known as one of the Thirty-Three Mogami Kannon Pilgrimage Sites.
The owner KANOYU's recommendation is this! "Yamagata Spicy Miso Ramen"
The owner, KANOYU, wants to spread "Yamagata Miso Ramen" all over the country.
What particularly catches your eye is the large red "spicy miso" that sits in the middle. As you eat it, the flavor changes as you gradually dissolve the spicy miso into the soup. This is a bowl that you can enjoy the changing flavors and never get bored of until the very end.
Attention to detail in soup
The soup is made with seafood soup made from dried sardines from Yamagata and Kyoto, and chicken and pork stock, to which a uniquely blended miso sauce is added to create the soup for the "Spicy Miso Ramen."
Attention to detail in noodles
Ramen HIDEYOSHI uses noodles specially ordered from Sakai Seimen in Yamagata City. The thin noodles that go down smoothly and the thick noodles with a high water content that are chewy are carefully hand-kneaded by skilled craftsmen.
The Chinese noodles are also delicious!
The chicken and pork soup, based on Yonezawa ramen, is well-balanced with a combination of several types of dried sardines and dried fish, and the hand-kneaded, curly noodles go perfectly together. Please give this a try.
This is also a must-try!
Ordering Method and Manners
Here we will introduce how to order and proper etiquette.
How to line up and points to note
When there is a line in front of a store, you will have to wait in line. There are a few things to keep in mind when doing so.
1. Line up at the back.
2. Line up once everyone is present.
3. Don't interrupt.
4. Do not block the entrances of other shops or homes.
5. Don't spread out too much on the road. Line up in a straight line.
Please follow the rules so that everyone can have a good time.
How to order
There are two main ways to order at ramen restaurants in Japan: buying a ticket from a ticket vending machine, or looking at the menu and ordering verbally .
In the case of Ramen Hideyoshi, you will look at the menu and then tell us verbally what you want .
Payment methods available are cash and QR code payment (PayPay, auPAY).
Orders are made verbally , so after you sit down, choose a menu item and call out to a staff member to place your order.
A staff member will come to your table and take your order.
A word from the owner, KANOYU
Thanks to you, we have many customers. However, we are still a newbie, having only been in business for a year. Even if we create a product with a desperate feeling, after a few months we question common sense and continue to evolve every day without fearing change, which is what gives me satisfaction. I would like to grow together with everyone across the country who loves Yamagata Spicy Miso Ramen .

"I want to spread the culture of women being able to eat ramen alone." With that thought in mind, she started eating out 20 years ago. She is a ramen-loving woman who has traveled to all 47 prefectures and eats more than 600 bowls a year. While there are many male ramen freaks, she is also known for her ramen life, which includes working as a TV personality and maintaining her figure. She organized "Ramen Girls' Gathering," renting out popular ramen shops, and in 2015 held the "1st Ramen Girls Expo" at the Yokohama Red Brick Warehouse. The event, which brings together popular shops from all over the country, was later held in Osaka, Nagoya, Tokyo, Kumamoto, and Shizuoka, attracting a total of approximately 750,000 people. In 2018, she founded Ramen Switch Co., Ltd. and released the world's first ramen jewelry brand, "ZURU+.". She produced and published "NOODLE SAKE -Spring, Autumn, Winter-" and "Rice and Agave Ramen-only Craft Sake," and "Tokyo Ramen Collection" (Shobunsha).
