Founded in 1934, Kintsuba Nakataya is a famous Japanese confectionery shop representing Kanazawa, with directly managed stores both in and outside the prefecture. Their signature kintsuba is made with plenty of Hokkaido Dainagon azuki beans, which are large, do not easily fall apart when boiled, and are high in sugar. Skilled craftsmen who continue to protect the traditional taste and manufacturing method carefully and slowly cook the beans so as not to lose their shape. The thin, fragrantly baked skin is filled with a rich, soft-tasting bean paste. When you gently break it with your hands, you will be captivated by the beauty of each grain of bean paste shining brightly without being crushed.

The Mount Higashiyama Chaya Street store, located in a corner of the tourist area Higashi Chaya District, is easily recognizable by its quaint exterior, a renovated townhouse built over 80 years ago. The first floor is the store, and the second floor is the sweets shop "Wa-mi," which offers a wide variety of sweets and desserts that can only be found here. All of the sweets served at "Wa-mi" are made with Noto adzuki beans from Ishikawa Prefecture . These finest adzuki beans are also known as "red jewels" for their vivid shape and color, and popular items include cheesecakes that use a generous amount of these beans, as well as tarts topped with tiger beans, chickpeas, green peas, and walnuts. They also serve Noto Dainagon Kintsuba, which is only available at "Wa-mi."
