Their menu items are named “◯◯ Set Meal,” with the ◯◯ being replaced with the names of various areas in Japan. The Nagasaki Set Meal is one such example.

The soup for the ramen and tsukemen are prepared differently. However, both start from a mix of soup stock extracted from chicken and pork, which is then added to a seafood-based soup carefully-made overnight.
